Chunky Granola Bars!
I'm here ready to roll with another perfect snack recipe for you to munch on. This one is a staple of mine, each Sunday i bake a snack to last the week and this is one is requested of me quite often. Its super delicious, nutritious and definitely tides me over between classes, on the way to the gym or sometimes i put some nut butter on top for breakfast. Oh and its SO easy!
Puffed Corn (1 cup)
Rolled oats (1 cup)
Mixed Fruit (1 cup)
Almonds/Walnuts (1 cup)
Packet of seeds
Medjool Dates x8
Raw Nut butter (any sort is fine) (3 tbl)
Mixed Spice (2 tsp)
Preheat oven to 180c.
Put all dry ingredients in to a big bowl.
Blend all wet ingredients together in a blender with 3 tbl boiling water to soften dates.
Pour over dry ingredients and combine.
Line baking tray with paper and pour in mixture. bake for 25-30 mins.
Slice after cooled.
