I have been noticing this past week that everyone has been getting sick and with this weather being super icy its hard not to feel a little run down. Therefore today I am making my ultimate vegetable soup and thought I would share it with you!
Packed with goodness and special warming, healing powers its the perfect way to combat the cold and warm up your soul and this recipe is large enough to last you a couple of days. Perfect. Try it out:
* Garlic clove x2
* Carrot x2
* Celery sticks x5
* Zuchinni x2
* Soup dry bean mix
* Vegetable stock (8 cups)
* Rosemary (1tsp)
* Oregano (2tsp)
* Thyme (1tsp)
* Parsley (1tsp)
- Slice up leek, garlic, carrot, celery, zuchinni and swede. I like to keep them quite chunky!.
- Spray a pan with a little coconut oil and pan fry veggies for 5 mins. Pour pan contents in to a big soup pot.
- Add beans, stock, 1 cup water, salt, pepper and spices to pot. Cover. Bring to boil.
- Once pot is boiling, turn heat down and simmer for 1 hour.
- serve and enjoy xxx
