Green Pesto Pasta

Hi there,

So for this update I thought I would share with you guys one of my mid week faves. This recipe is so quick to make and i generally cook it up in 20 minutes and have a nourishing and super delicious dinner for 2 nights.

Its the kind of green meal that gives you the same satisfying fullness and flavour of fresh pasta but also packs you full of nutritious green goodness. My boyfriend even likes it which is saying a lot because he looks at things like this and says "no, that looks too healthy for me" :)

+ Zucchini (2-3)

+ Bunch of broccolini

+ Fresh basil (2 cups)

+ 1 clove garlic

+ cashews (1/3 cup)

+ parmesan cheese (1tbl)

+ dash lemon juice

+ olive oil (1/2 cup)


Place the basil, garlic, cashews, cheese, lemon juice and olive oil in a food processor and blend until combined nicely (i like to leave it a little rough still but this can be done to your liking).

Using a spiralizer, twist your zucchinis in to noodle shapes.

Roughly chop broccolini.

Place a pan on medium heat and add the broccolini. Pan toss for approximately 5 minutes.

Add the zucchini noodles and pan toss for another

5-8 minutes.

Finally, add the pesto and stir until entire contents are heated through.

Remove from heat, serve and enjoy :)
