Super Easy Cauliflower Pizza

So I thought I would share a super easy pizza recipe with you today, this is the way I like to make pizza (I also make a quinoa pizza base sometimes) that is way more nourishing than a dough base and I think just as tasty, if not better! Cauliflower works wonderfully as a base for anything you feel like topping your pizza with, so feel free to go bananas. I make this recipe around once a month regardless of the time of year because pizza is great in anyyyyyy weather.
Ingredients:
- 1 large cauliflower
- 100g almond meal
- 2 eggs (free range)
- Dried oregano/rosemary (as much as you desire)
Method:
- Heat oven to 180c
- Cut cauliflower in to florets and blitz in food processor until fine. Put in large bowl, cover with gladwrap and microwave for 5.5 mins
- Allow to cool for a couple of minutes then using some paper towel cover cauliflower and press down hard, drain liquid in to sink, repeat until you feel pretty much all liquid is removed
- Mix in almonds, egg, oregano, rosemary and seasoning
- Line a pizza tray with baking paper and spread mixture evenly. Bake for 15 mins
- Remove from oven, apply chosen topping and return to oven for 5 mins
